pork salami with vermouth, Campari, orange zest and juniper

Fernet
pork salami with Fernet Branca, oil-cured olives and preserved lemon

Leek Ash and Porcini 
pork salami with leek ash, porcini mushroom and port

Lamb Harissa 

A lamb salami with harissa (a spicy, aromatic chili paste), za'atar (a Middle Eastern blend of savory dried herbs), and preserved lemon.
