Chef Justin Severino’s cured meats have put his Pittsburgh restaurants in the national dining spotlight. Through Salty Pork Bits, Severino is making his charcuterie available nationwide, offering expertly crafted salumi delivered straight to your door.  

Severino is a skilled whole animal butcher who carefully selects the animals he uses in his products from small, independent farms that demonstrate humane, sustainable farming practices.

Choose from a selection of a la carte products and specialty boxes, which ship weekly or a Salty Pork Box subscription and receive a monthly delivery of four handcrafted salami. Click on  Subscriptions for a list of upcoming flavors. Packages are typically shipped the second week of each month. Subscribe to our e-mail list for special releases like whole muscle charcuterie, specialty sausages and holiday shipments.

Frozen products ship using dry ice to arrive frozen and are only available to ship to limited destinations at this time.

Technically, no, but we recommend it. Salami is shelf-stable, so it doesn’t require refrigeration.  Before opening the package, no refrigeration is required for salami. After opening, we recommend refrigeration to maintain freshness, quality and aesthetics.  For best results, once removed from packaging, keep it wrapped in butcher paper and put it in the fridge.  Other products from Salty Pork Bits do require refrigeration, refer to the individual product for more details.

During warm weather months, we often ship our salami with cold packs to minimize rendering and maintain aesthetics. Fat melts at higher temperatures, but it does not impact the quality of the product. If your cold pack has melted, know the quality of the product has not changed.
